Cheese Stuffed Mashed Potato Balls

These cheese stuffed mashed potato balls covered with seasoned breadcrumbs will make the perfect side dish!

Ingredients
  

  • 500 g potatoes
  • 2 eggs
  • 2-3 tbsp sliced green onions
  • 70 g Gouda cheese
  • 50 g Italian breadcrumbs
  • Salt, garlic powder, black pepper and paprika to taste
  • Olive oil (optional)

Instructions
 

  • Peel and cut the potatoes and bring the water to a boil. Add the potatoes and cook until soft.
  • While the potatoes are cooking, slice the green onion, cut the cheese into small cubes, beat one egg in a small bowl and mix the Italian breadcrumbs with a little bit of garlic powder and paprika.
  • When the potatoes are cooked, drain the water, place the potatoes in a large mixing bawl and let them cool. Add the egg, green onion, salt, garlic powder, black pepper and paprika. Using a potato masher, mash everything together until smooth and well mixed.
  • Take a small amount of potato mixture and flatten it in the palm of your hand. Put a cube of cheese in the middle and cover with more potatoes. Roll the potato ball in your hands so that the cheese is completely covered with the potato mixture.
  • Coat the potato ball with the beaten egg and then with the breadcrumbs.
  • Place the mashed potato balls on a baking shit covered with parchment paper and drizzle with olive oil (optional). Bake at 400 F degrees for 20-25 minutes or until slightly golden brown.

Notes

Serve the Cheese Stuffed Mashed Potato Balls immediately with ketchup, sour cream, BBQ sauce or any other sauce you like.
You can use any cheese you like that melts well.
You can use any seasoning you like.
