These cheese stuffed mashed potato balls covered with seasoned bread crumbs will make the perfect side dish!
To make this dish you don’t need to be a pro in the kitchen. The process of making stuffed mashed potato balls is so easy, that even a kid can make them.
Cheese Stuffed Mashed Potato Balls make the perfect snack, appetizer or even a side dish. They are also a great dish to cook with leftover mashed potatoes.
Ingredients:
500g potatoes
2 eggs
2-3 tbsp sliced green onions
½ cup (70g) Gouda cheese
½ cup (50g) Italian breadcrumbs
Salt, garlic powder, black pepper and paprika to taste
Olive oil for drizzle (optional)
Step 1
Peel and cut the potatoes and bring the water to a boil. Add the potatoes and cook until soft.
Step 2
While the potatoes are cooking, slice the green onion, cut the cheese into small cubes, beat one egg in a small bowl and mix the Italian breadcrumbs with a little bit of garlic powder and paprika.
Step 3
When the potatoes are cooked, drain the water, place the potatoes in a large mixing bowl and let them cool. Add the egg, green onion, salt, garlic powder, black pepper and paprika. Using a potato masher, mash everything together until smooth and well mixed.
Step 4
Take a small amount of potato mixture and flatten it in the palm of your hand. Put a cube of cheese in the middle and cover with more potatoes. Roll the potato ball in your hands so that the cheese is completely covered with the potato mixture.
Step 5
Coat the potato ball with the beaten egg and then with the breadcrumbs.
Step 6
Place the mashed potato balls on a baking shit covered with parchment paper and drizzle with olive oil (optional). Bake at 400 F degrees for 20-25 minutes or until slightly golden brown.
Serve the Cheese Stuffed Mashed Potato Balls immediately with ketchup, sour cream, BBQ sauce or any other sauce you like.
Notes:
You can use any cheese you like that melts well.
You can use any seasoning you like.
