This cheese covered potato stuffed meatballs baked in a simple tomato base sauce are an interesting and easy meal idea for the whole family.
If you’ve been with me for a long time, you know that I have three little kids and I don’t like to spend to much time in the kitchen. I’m always looking for a simple, fast and easy way to prepare meals for my family. In the past I shared my main course ideas like Oven Roasted Chicken and Veggies, One Pot Chicken and Rice Recipe, Oven Pot Roast, Low Carb Ground Turkey Recipe and many other recipes. These potato stuffed meatballs are no exception. Fast, simple and delicious!
Ingredients:
1 lb. small potatoes
1 lb. ground meat (I use ground beef and ground turkey)
1 onion
1 egg
300 ml boiling water
3 tbsp of tomato paste
1 tbsp olive oil
½ cup of cheese
1 tbsp chicken flavored seasoning mix
1 tsp salt
½ tsp garlic powder
¼ tsp black pepper
½ tsp paprika
Step 1
Prepare the potatoes. Scrub the potatoes clean. Transfer the potatoes to a saucepan or a pot large enough to hold all the potatoes with some room on top. Cover the potatoes with an inch or two of cold water and bring to a boil, then reduce to a simmer. Do not cover. The potatoes are done when they are tender all the way through. You can test this by poking the potatoes with a fork. If the fork slides easily all the way to the center, the potatoes are done. Let them cool and take the potato skin off. You can run the potatoes under cold water or dunk them in an ice water bath to cool them down faster.
Step 2
In a big bowl mix the meat, finely chopped onion, egg, 1 tbsp of tomato paste, salt, garlic powder, black pepper and paprika.
Take a small amount of meat mixture and flatten it in the palm of your hand. Put a potato in the middle and cover with more meat. Roll the meatball in your hands so that the potato is completely covered with meat and place it into a baking dish.
Step 3
Let’s make the sauce. Bring 300ml of water to a boil and add the remaining tomato paste, a tablespoon of chicken flavored seasoning mix, olive oil and more seasonings to taste. Mix well.
Step 4
Cover all the stuffed meatballs with the sauce and sprinkle with cheese.
Step 5
Preheat the oven to 350 F degrees and bake for 30-40 minutes. If the cheese starts to burn, cover the dish with a piece of parchment paper.

Notes:
You can use any type of ground meat you like or use a mix of different types of meat.
You can change the type and amount of seasonings to your liking.
Serve it hot with your favorite side dish.
