I always buy a few packages of ground turkey meat to stack my freezer. It’s helps me a lot, when I need to prepare a quick meal. In order to make it juicier I like to add different types of vegetables. In this recipe I used carrot, fennel, celery, tomato, mushrooms, onion and garlic. The combination of these veggies was so successful, that I decide to share it with you)
One more thing: you can serve it over any grain side dish you like or over mash potatoes, but I like it very much over spring mix greens with a little bit of bean sprouts for a crunch and lemon juice for more flavor. Yamm!
Ingredients:
350 g (12 oz) ground turkey
1 carrot
1 fennel
1 tomato
1 celery stick
7-8 (6 oz) mushrooms
½ onion
2 garlic gloves
½ teaspoon salt
1/8 teaspoon black pepper
½ teaspoon paprika
1 teaspoon Italian seasoning
2 tablespoons olive oil
2 cups spring mix greens
½ cup bean sprouts
Step 1
Clean and dry all the veggies. Grade the carrot, chop the onion, fennel, tomato, celery stick, mushrooms and garlic.
Step 2
Heat olive oil in a pan and cook the onion for 1 minute. Then add all the vegetables to the pan and mix together.
Step 3
Add all the seasoning, mix well and cook for 3-5 minutes or until the vegetables lightly soften.
Step 4
Move all the veggies to the sides of the pan and add the ground turkey to the middle. Cooke for one minute then carefully turn it over and cook for one more minute. When the meat gets slightly white mix it with the vegetables.
Step 5
Serve it over any grain side dish you like or over mash potatoes, or over spring mix greens with a little bit of bean sprouts for crunch and lemon juice for more flavor.
