Filled with cream cheese frosting and strawberry jam, this crepe cake makes some beautiful and delicious dessert.
To celebrate the last day of the Russian Maslenitsa I decided to make this fancy crepe cake. It looks like layered cakes are a lot of work, or that they are hard to make, and the truth is you need some time to make all those crepe layers, but it’s an easy process and totally doable!
The best part about crepe cakes is that you can create different flavors every time! Just choose any crepe recipe you like, it can be a traditional milk-based crepes, whey-based crepes, chocolate crepes, or you can use my buttermilk crepes recipe. Then make any filling you like, it can be sweet whipped cream, or cream cheese frosting, pastry cream and of course, you can add fresh fruits, lemon or orange zest, any type of jam, condensed milk etc.

Ingredients:
Any crepes recipe you like or my Russian Crepes Recipe
226g cream cheese
100ml heavy whipping cream
30g sugar powder
100g strawberry jam
Ingredients for the chocolate glaze:
35g (4 tbsp) sugar powder
5g (2 tsp) cacao powder
15ml (1.5 tbsp) hot milk/water
10g (1tsp) butter (optional)
Step 1
Make any crepes recipe you like, or you can use my Russian Crepes Recipe
Step 2
In a bowl mix the cream cheese, heavy whipping cream and sugar powder to a state of dense mixture. Some tiny lumps are ok and will not be noticeable in the cake.
Step 3
Add the jam and gently mix with a spatula.
Step 4
Assembling the Crepe Cake. Place the first crepe layer onto a serving platter and spread about 2-3 tbsp of frosting on top, then do the same between each crepe layer.
Step 5
Cover the crepes cake with a plastic wrap and refrigerate it for at least 6 hours or until the frosting has firmed up. It will be much easier to slice after refrigeration and won’t split apart.
Step 6
After the cake has chilled, make the chocolate glaze. In a bowl mix the sugar powder, cacao powder and hot milk. Add the butter and mix again until the butter fully incorporates into the chocolate glaze.
Step 7
Poor the chocolate glaze over the crepes cake and decorate with your favorite garnish (optional).
Notes:
This cake doesn’t have to be perfect, so don’t be afraid to experiment with different flavors.
