Moist and delicate cake with hints of strawberries will be one of your favorite treats on the table.
Although is October and all the stores are filled with pumpkins, I want to share with you this recipe of homemade strawberry cake that you can make from scratch in 40 minutes!
The recipe is so simple to make that even your kids can do it with you)
Ingredients:
400 g strawberries
150 g all-purpose flour
100 g sugar
80 ml warm milk
50 ml vegetable oil
1 egg
1 teaspoon baking powder
1/8 teaspoon salt
3 tablespoon orange juice
1.5 tablespoons sugar
Step 1
In a mixer mix together the egg and sugar until light and fluffy.
Step 2
Add the warm milk, vegetable oil, salt, flour and the baking powder, mix again until combined well (don’t over mix).
Step 3
Clean the strawberries, remove the green stalks and slice them. Cover the bottom of the baking dish with parchment paper, spray with baking spray and fill it with the dough. Using only half of the strawberries, put the strawberry slices into the dough vertically in a circle. Bake at 320 degrees for about 30 minutes or until you get a dry wooden stick. Let it cool in the baking dish for 10 minutes, then transfer it and let it cool completely.
Step 4
In the meantime, in a small saucepan mix together the rest of the strawberries, 1.5 tablespoons of sugar and the orange juice. Bring it to a boil and let simmer for 2 minutes. Remove from the heat and let it cool.
Step 5
Decorate the cake with the cooked strawberries and it’s ready to eat!
Notes:
I used 6” springform pan.
You can mix all the ingredients using a hand mixer.
