Every time, when you are making a cake that has a special shape, you probably have a lot of leftover cake. That is what happened to me, when I made my daughter’s Tinkerbell birthday cake.
It’s a pity to throw out the remnants of the cake, so I decided to use it and make one more desert for the birthday party – Leftover cake pops! Their very easy to make and all you need is leftover cake crumbs, a little bit of frosting, melted chocolate and pop sticks. Even if you used the whole batch of cake frosting, you can mix a couple spoons of cream cheese with butter and confession sugar to crunch the cake crumbs together and they are ready for a dipping in chocolate.
Kids love them! Easy to hold and easy to eat!
Ingredients:
2 cups leftover cake crumbs
½ cup frosting
1 ½ cup semi-sweet chocolate (or chocolate of your choice)
Pop sticks
Step 1
Start to melt the chocolate on the double boiler. Mash the remains of the cake into crumbs and add the frosting. Mix well until the mixture sticks together.
Step 2
Roll balls, using a one teaspoon scoop. Dip a pop stick in chocolate, about a half inch dip and insert the pop stick into the cake ball half way through. Let them cool in the refrigerator for 30 minutes.
Step 3
Warm up the melted chocolate if needed. Deep each cake pop into chocolate. Twirling and tapping the cake pop getting rid of excess chocolate. Insert ready cakes pop into assembled stand and refrigerate for a few hours.

Note:
You can serve the leftover cake pops just covered in chocolate or you can use decorating sprinkles, or colorful melts to make them more fun.
