Sometimes you have to be creative with every day foods and present them in a unique way, specially, if you have kids, you must be creative in the kitchen!
Noodle meatball nests is not my creation in the first place, but I’m presenting to you my version of this dish. At first glance it may seem that it’s very hard to make it, but it’s not. To prepare noodle meatball nests you need to go through three big steps: make the meatballs, make the sauce and make the noodles. As a result, your family will enjoy a great looking and tasting dish!
Cute and delicious, meatballs covered with red sauce, placed in a noodle nest will be a hit for your family dinner!
Ingredients:
Egg noodle nests
Ingredients for the meatballs:
½ pound ground beef
½ pound ground pork
½ cup oatmeal flour
1 egg
2 tablespoons chopped basil
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
Ingredients for the sauce:
2 (24oz) Bertolli olive oil, basil & garlic pasta sauce
½ onion
1/2 cup beef broth
2 tablespoons olive oil
1 teaspoon sugar
1 teaspoon Italian seasoning
1 teaspoon garlic powder
½ teaspoon black pepper
Step 1
In a big bowl put together all the ingredients for the meatballs. Mix all the ingredients very gently and set aside.
Step 2
Chop the onion, then in a deep pan heat the olive oil and cook the onion until golden brown.
Step 3
Add the rest of the ingredients for the sauce and cook on low for 10 minutes.
Step 4
From the meatball mixture, form the balls using a tablespoon scoop.
Step 5
Put all the meatballs into the sauce, close the lid and cook for 15 minutes.
Step 6
In a deep-frying pan boil the water with 1 tablespoon of salt for the egg noodle nests. Put the noodle nests into the water and cook until ready.
Step 7
Very careful, pull out the noodle nests and place them on a baking sheet until all the water is drained.
Step 8
Place the egg noodle nests on a plate. Inside of each nest put a meatball and pour the sauce on top. Garnish with fresh basil.

Notes:
You can make the meatballs in advance, but the egg noodle nests must be cooked before serving the dish. When the noodles cool off, it will be very sticky without sauce or butter.
If you don’t have oatmeal flour, just use regular oatmeal grinded down in a food processor.
