I can’t believe it’s almost the middle of September and it’s almost the beginning of the holiday season! A lot of decorations and cooking evolved… I love this time of the year!
Another important event happening this fall is that our son is starting Pre-K school today! I’m excited and sad at the same time because my baby is growing up too fast!
For his first day at school I made these delicious puff pastry chicken envelopes and put them in his new lunch box. Very soft envelopes filled with juicy chicken make an excellent snack! It can also be a great appetizer for the coming holiday season! They are wonderful to serve hot or cold and can be made in advance. Just a few seconds in the microwave and you have a fresh baked snack!
Ingredients:
1 package Puff Pastry sheets
1 lb. chicken boneless tight
1 small onion, finely chopped
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon Chili powder
1 egg, bitten
Butter
Step 1
Defrost the puff pastry.
Step 2
Clean chicken meat from excess fat and cut into small pieces.
Step 3
In a bowl mix together chicken meat, finely chopped onion, salt, black pepper, Chili powder and set aside.
Step 4
On your work surface roll out the sheet of puff pastry, then cut it into nine squares.
Step 5
In the middle of each square put about tablespoon of meat mixture and ¼ teaspoon of butter. Apply a bitten egg on to the edges of each square, in order for all the corners to get glue together. Make an envelope.
Step 6
Place all the puff pastry envelopes on a baking sheet and coat the tops with the bitten egg. Bake at 325 degrees for 30 minutes.
