I like to improvise in the kitchen but I also like to watch cooking shows (if I can find a minute to relax trough out my busy day), I like flipping pages of food magazines and browse through different accounts on social media to get some inspiration for my next dish. My criteria is very simple: it must be healthy and simple to cook, using simple products.
That how my Turkey Stuffed Zucchini Boats were created. The idea was to staff vegetables with anything I had in the kitchen, veggies, meat or both. So lucky me I had some green zucchini and ground turkey in my fridge. Everything else just came together! It’s like painting a picture: a little bit of color and you have a pretty and delicious dish.

Ingredients for stuffed zucchini boats:
½ pound ground turkey
3 small green zucchini
½ yellow onion
1 carrot
½ cup cherry tomatoes
1 cup baby spinach
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons olive oil
2 tablespoons of your favorite cheese
Basil for garnish
Ingredients for bulgur:
2 ½ cups of water
1 cup bulgur #3
1 teaspoon butter
½ teaspoon salt
Step 1
In a small pot add 2 ½ cups of water and bring it to a boil. Add butter, salt and bulgur, stir in all the bulgur ingredients, cover with lid and cook on very low heat for 18-20 minutes (all water must evaporate). Mix well when it’s ready.
Step 2
Clean and peel the zucchini, cut them in half, using a small knife, cut through the perimeter of the zucchini then take a teaspoon and take out the middle, so the zucchini looks like a boat.
Step 3
Chop the onion, grate the carrot, cut the cherry tomatoes in half, clean the spinach.
Step 4
In a big pan warm up 2 tablespoons of olive oil, add chopped onion, grated carrot and cook for 2 minutes. Add the cherry tomatoes and cook for 1 minute. Add the baby spinach and cook for 1 more minute.
Step 5
Add ground turkey to the vegetable mixture. Add salt, black pepper, Italian seasoning and mix them all together. Cook for about 5 minutes or until the meat is almost cooked through.
Step 6
Fill out the zucchini boats with the turkey and vegetables mixture, garnish with your favorite cheese and bake for 25-30 minutes at 350 degrees.
Step 7
Place two stuffed zucchini boats over some bulgur in the middle of the plate, garnish with chopped basil and enjoy this delicious, healthy dish!
Notes:
You can replace the bulgur with any kind of grain you like.
