It’s easy to make a healthy bread for you and your family!
In March of last year, I published my Whey Bread Recipe and it happened to be one of my most popular recipes on my blog. I received great responds about my bread, and also a lot of questions, such us:
“Can I make it with whole wheat flour?”
“Could I make buns with this recipe?”
“Could I use my bread machine to make this bread?”
These three questions where the most popular and I decided to make this posting to answer them.
To answer question number one, I baked a whole wheat whey bread replacing 100% white flour with whole wheat. To my surprise the bread didn’t come out more compact or lower in volume than those made from white flour. The finished product was divine! The bread had a very soft and airy inside texture and the crust was crispy on the outside.
One of my readers made it with 4 cups wheat flour and 1 cup white flour and it came out awesome (in her words))
I also made buns with whole wheat flour. The taste was great but they didn’t rise, like they would have when you make them with a white flour.
For the last question, I will be honest with you I don’t have a bread machine but, I’m sure that you can use this recipe and make a bread if you own one!
Ingredients:
2 cups warm whey
2 teaspoons active yeast
1 tablespoon sugar
1.5 teaspoons salt
3 tablespoons olive oil
5 cups whole wheat flour
Step 1
In a mixer bowl add 1 cup of warm whey, 2 teaspoons active yeast and 1 tablespoon of sugar. Give a quick stir and set aside for 15 minutes or until mixture slightly rises and you start to see bubbles.
Step 2
Add the second cup of warm whey, salt and olive oil, then add sifted flour to the yeast mixture and knead the dough. Keep the mixer on low speed and add the flour in parts so you can have control of the dough’s consistency. The dough should be soft and slightly sticky.
Step 3
Transfer the dough to a pre-oiled bowl, cover with plastic wrap and set aside in a warm place for an hour and a half.
Step 4
When the dough doubles in size, carefully knead the dough with your hands and transfer it to a pre-oiled baking dish. Cover with plastic wrap or a plastic bag and set aside for another 30 minutes (don’t make the plastic too tight, so the dough has room to rise).
Step 5
After 30 minutes place the baking dish into a preheated oven at 375 degrees and bake the bread for 30-35 minutes.
Step 6
Leave the baked bread in the baking dish for 5 minutes. Then very carefully, pull the bread out and let it cool completely (or until you can touch it in order to cut).
Note:
When the bread is in the oven, check it half way through to see if the top of the bread seems to burnt. If it does, cover it with a piece of aluminum foil.
