Very often the idea of eating healthy scares people. They think it’s very complicated and expensive to do so. I’ll let you in on a secret: “it’s not”. The hard part is to stop eating junk food, fast food and drinking a super unhealthy soda. The easy part is to start cooking at home, drinking water, useing a lot of vegetables, eating grains and lean meats. That’s how simple is that!
My recipe of Zucchini Casserole with Ground Turkey can help you with that. All you need is to put together fresh vegetables with ground meat and cover with a mixture of eggs and milk. Your oven will do the rest of the work).
Very easy to make, this healthy and delicious casserole will feed you and your family at any occasion.
Ingredients:
4 small zucchinis
2 carrots
2 tomatoes
1 onion
½ pound ground turkey
3 eggs
1 cup of milk
1 cup ground cheese
2 tablespoons olive oil
1 ½ teaspoons salt
1 teaspoon Italian seasoning
1 tablespoon chopped parsley
Step 1
Clean and peel the zucchini, then grade them. Cover the sieve with cheesecloth and put it in a bowl. Transfer the grated zucchini into the cheesecloth and set a side for 10 minutes. Then collect the cheesecloth in a bun and squeeze the zucchini juice.
Step 2
Peel and grade the carrots, then chop the onion and tomatoes.
Step 3
Heat the olive oil in the pan and cook the ground turkey until the color changes from pink to gray.
Step 4
In a big bowl mix together all the vegetables, turkey meat, 1 teaspoon of salt and Italian seasoning.
Step 5
In a separate bowl mix together milk, eggs, cheese, ½ teaspoon of salt and chopped parsley.
Step 6
Transfer the veggie mixture into the baking dish and cover it with the eggs mixture. Bake at 350 degrees for 40 minutes.

Notes:
You can use different type of ground meat.
I use the mix of finely shredded Colby and Monterey Jack cheeses but you can use the cheese of your choice.
