Tender and juicy chicken breast, fresh Mozzarella cheese, tomatoes, spinach marinated in delicious lemon-basil marinade and baked in the oven.
I never really liked to eat chicken breast despite the fact that this meat is considered healthier. Since I try to cook healthy food for my family, I tried making dishes using chicken breast before and I was never satisfied with the results (specially my husband)). Until I decided to marinade the chicken using lemon juice.
Since it’s lemon season, I was collecting a few lemons from our tree and I got the idea to try marinating the chicken breast in lemon juice, olive oil, dry basil and a few more spices. To make a dish more colorful I decided to add tomatoes and spinach, and to make it more interesting I added fresh Mozzarella cheese (you never can go wrong with cheese)). As a result, it turned out a very tasty dish! I hope you will liked it too.
Ingredients:
2 chicken breasts
8 oz fresh Mozzarella cheese
3 Roma tomatoes
1 cup spinach
2 tablespoons lemon juice
4 tablespoons olive oil
2 tablespoons Maple syrup
2 teaspoons dry basil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
Step 1
Clean and dry the chicken breasts, then cut each breast in half. Put the chicken between two pieces of plastic wrap and pound it until it’s thin (don’t over do it).
Step 2
Slice the tomatoes and the Mozzarella cheese. Clean the spinach and cut off the stems. Then make the marinade by mixing together the lemon juice, the olive oil, the maple syrup and seasonings.
Step 3
Divide the marinade into two bawls. In one bawl marinade the chicken breasts, in another marinade the tomatoes and Mozzarella cheese.
Step 4
Preheat the oven to 375 degrees. In a baking dish start to layer our dish. First layer the two pieces of chicken breast, then a layer of the tomatoes and a layer of the Mozzarella cheese.
Step 5
Next will be a layer of spinach and then repeat all the layers again. Bake for 30 minutes.
