To fix a quick and delicious meal I always have ground meat in my freezer. Very easy to work with, it can be a quick meal on a busy day. One of the great ways to use ground meat is to make meatballs. You can cook them in sauce, you can fry them or roast them. By using different combinations of seasonings, you can play with the flavor.
Today I want to share my recipe for roasted meatballs with fresh rosemary. I love this aromatic evergreen herb. It can be used both in sweets and savory recipes. Rosemary leaves are used as flavoring in foods such as stuffing and roasted lamb, pork, beef, chicken and turkey. Fresh or dried Rosemary leaves are a fantastic way to change the flavor of any dish. That is why I have a whole bush outside my house!
In my recipe, I use a little chopped rosemary inside of the meat and several branches of rosemary on top of the meatballs. While cooking, it gives an unbelievable smell, which fills the whole house.
Delicate and fragrant meatballs can be served with traditional side dishes, like mash potatoes or you can go with healthy grains, like barley, buckwheat or brown rice. Another wonderful way to serve them is in pita bread with fresh cut salad. That way you have a tasty meal to go.
No matter, how you’ll choose to serve these meatballs with rosemary, I guarantee it will be a delicious meal for you!
Ingredients:
1-pound ground beef
½ onion
1/3 cup oatmeal flour
¼ cup ground cheese of your choice
1 egg
1 teaspoon chopped rosemary
¼ cup chopped Italian parsley
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon black pepper
3 branches of rosemary
Olive oil
Step 1
Finely chop the onion and cook until golden brown.
Step 2
In a big bowl mix together all the ingredients.
Step 3
Grease the baking dish with olive oil. Using a ½ cup measuring cup, form the meatballs and place them in a baking dish. I made six big meatballs from the meat mixture. Place 3 branches of rosemary on top of the meatballs and cover the dish with aluminum foil. Bake at 400 degrees for 35 minutes, then uncover the meatballs and bake for 10 more minutes (until they reach 160 degrees on the inside).

If you don’t have oatmeal flour, just use regular oatmeal grinded down in a food processor.
