In the past few months a lot is going on with our family. I’ve heard that going from one to two kids is harder than going from two to three kids. I don’t thing so and the hard part is not the baby, the hard part is the middle child. She’s only two and a half and she is really hard on us right now. We trying to give her a lot of attention but she is super jealous, screaming all the time, crying…I thing you’ve got the picture))))
Wait a minute… why am I telling you about my kids when it’s a food blog, you may ask? Because, if you’re busy like I am, you will understand that time is priceless. I don’t have a lot of time to spend in the kitchen, that’s why I’m going for easy to make and delicious recipes, like this oven baked stew.
You buy already chopped meat (that way you save time on cutting it), you cut all the vegetables, fry them a little bit, then add some diced tomatoes, beef broth, some seasoning, cover with the lid and send it to the oven for an hour. That’s it! If you work fast, it may take you about 15 minutes in the kitchen than you can do other stuff while it’s cooking.
Ingredients:
2 lb beef (stew meat)
2 carrots
1 onion
2 Italian eggplants
3 potatoes
4 garlic gloves
1 can diced tomatoes (I use Hunts brand)
2 cups beef broth
1 tablespoon olive oil
1 tablespoon butter
2 bay leaves
1 ½ teaspoon salt
½ teaspoon black pepper
1 ½ teaspoon paprika
½ teaspoon garlic powder
Step 1
Preheat the oven to 300 degrees. Clean the meat and dry it with a paper towel. Chop all the vegetables.
Step 2
Heat the olive oil and the butter in a dutch oven for about a minute. Add the meat and cook it until brown on all sides. Add the onion, 1 teaspoon of salt, ¼ teaspoon of black pepper, give a good stir and cook for two minutes.
Step 3
Add the carrots, the eggplants, the bell pepper, the garlic and cook it for 5 more minutes. Then add the diced tomatoes and give it a good stir.
Step 4
Add the beef broth and potatoes, the bay leaves, ½ teaspoon of salt, 1 ½ teaspoon of paprika, ¼ teaspoon of black pepper and ½ teaspoon of garlic powder. Mix them all together, cover with a lid and put it in the oven for an hour.

Notes:
If you like spicy food, then definitely add your favorite spicy seasonings.
Try to choose meat with a marble like look (that way you know it’s going to be tender and juicy).
