If you’re a cheesecake lover and you’re looking for a new way to make a cheesecake, let me tell you that this Royal Cheesecake is what you’re looking for! A delicate, soft and sweet layer of farmers cheese sandwiched between two layers of buttery clumps, it will make you wanted more and more… It’s perfect with a cup of coffee in the morning or with hot tea in the afternoon.
Another great thing about it is that the main ingredient of this Royal Cheesecake is my favorite, farmers cheese! You can make this wonderful cheese at home or you can buy it at your local international market.
One more tip I will share with you before I show you how to make this gorgeous Royal Cheesecake is to make sure it’s completely chilled in the fridge before serving it. I like to make it the night before so it can chill completely in the fridge.
Ingredients for the filling:
16 ounce Farmers cheese
4 eggs
1/3 cup sugar
1 teaspoon vanilla extract
1 tablespoon lemon zest
¼ teaspoon salt
1/3 cup raisins
Ingredients for the dough:
2 cups whole purpose flour
1 ½ sticks cold butter
2 tablespoons sugar
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
Step 1
Mix all the ingredients for the filling together by hand or with a mixer.
Step 2
Mix together all the ingredients for the dough using a food processor until you get big clumps of butter and flour.
Step 3
Spray a baking dish with none-stick cooking spray and layer with parchment paper (I use 10-inch split baking dish). Use 2/3 of the dough mixture to create the bottom layer of the cheesecake.
Step 4
Pour all the cheese mixture into the baking dish.
Step 5
Sprinkle the remaining dough clumps on top of the cheese mixture and bake at 350 degrees for 40-45 minutes.

Notes:
Let it cool on the counter and DON’T try to take the cheese cake out the baking dish! Cover with plastic wrap and let it chill in the fridge overnight.
