Love is in the air! February is the month of love! Can you already feel it? The smell of chocolate and roses, the sound of champagne, hugging your loved ones, enjoyment of viewing your favorite romantic movie together…
Who is your Valentin this year? A husband or a wife, a girlfriend or a boyfriend, a mom or a dad, a son or a daughter, or maybe just a good friend? Do you want to know who is mine? Besides my awesome husband I have one more man in my life now! We welcomed our third child, our second son in this world and now we’re a family of five.
With a newborn in the house I’m not planning on romantic get away with my husband this year. What I have in mind is a family affaire Valentine’s Day. A nice day with my family, good food and, of cause, delicious desert like those four ingredients, homemade chocolate covered apricot and plum hearts. No bake healthy candies that taste and look unbelievable!
Ingredients:
5 oz. dry apricots
5 oz. dry plums
3.5 oz. walnuts
10 oz. bittersweet chocolate chips
Red candy melts (optional)
Step 1
In a food processor mix together the apricots, plums and walnuts.
Step 2
Lay out the mixture on a plastic wrap, smooth it with your fingers to get a flat layer about ¼ inch thick. Cover it with plastic wrap and chill for 1 hour.
Step 3
Melt the chocolate chips using a glass bowl or a candy melting pot. Take out the chilled flattened mixture and cut out the hearts using a heart shaped cookie cutter.
Step 4
Dip each hurt in the chocolate using a fork. Hold the chocolate covered heart above the bowl for a few seconds to let the excess chocolate drip off. Then transfer the chocolate covered hearts to a baking tray covered with parchment paper. Set a side until the chocolate is hardened.
