Every time I go to Casco, I like to stop by this big refrigerator with fresh fish. To be honest with you, I’m not a huge fan of sea food (I don’t eat any sea food other than fish). The last time I was there, a beautiful package of whole trout fish got my attention and in my head, I pictured this whole fish with crispy golden skin on my plate.
Trout is a freshwater fish. Growing up, my grandpa use to take me to fish with him in a local river so, I love the taste of freshwater fish. This fish super easy to cook and because it contains mostly larger bones, it super easy to eat.
In my recipe, I use fresh herbs like dill and rosemary, salt, garlic and herb seasoning blend, lemon slices and a little bit of olive oil. All preparation takes about 10 minutes, then 35-40 minutes cooking time and you have an amazing, healthy main dish to serve. Whole trout with crispy skin, very delicate fish meat with a touch of lemon flavor and unbelievable aroma of herbs will be one of your favorite dishes too.
Ingredients:
2 whole trout fish
1 thin sliced lemon
2 sprigs of rosemary
2 sprigs of dill
1 teaspoon garlic and herb seasoning blend (I use salt free blend)
Salt to taste
Step 1
Lay out the fish on a baking sheet with foil. Make diagonal slashes on both sides of the fish. Season the fish with salt, garlic and herb seasoning blend on both sides and on inside cavity as well. Stuff the cavity of the fish with the slices of lemon and fresh herbs. Rub the olive oil over the top surface of both fish.
Step 2
Roast the fish in a preheated oven to 375 degrees for 35-40 minutes. Serve the fish whole with lemon slices and fresh herbs.
Notes:
Do not cover the fish with aluminum foil when cooking.
Do not feed the kids without supervising.
