I have a confession to make! In everyday life, planning is my thing. I just love to plan everything. Unfortunately, my planning skills don’t work when it comes to planning meals. Are you familiar with the feeling, that you get late at night when you have a craving for some thing and you think tomorrow you will make it and the next day you wake up and crave something completely different? That’s me. I never know what I want to eat and it’s driving my husband crazy…
I found it very helpful to go to the grocery store and look for inspiration. Looking at fresh vegetables and meats I can build combinations of different meals in my head. Does it sound crazy? That is how I come up with this recipe. I saw super cute and colorful cherry tomatoes and I knew that I wanted to make pasta with fresh tomato basil sauce.
In my recipe, I use bucatini pasta (because it’s my husband’s favorite type of pasta with a little hole in the middle), super sweet and colorful cherry tomatoes, fresh basil that I grow in my back yard, three different Italian cheeses (we always have a lot of different types of cheeses in our fridge) and a little bit of garlic. That’s how simple it is! A super yammy dish in 20 minutes. I hope your family will love it the same way that mine does.
Ingredients:
1 package Bucatini pasta (16 oz)
4 cups cherry tomatoes
½ cup Parmesan cheese
½ cup Pecorino Romano cheese
½ cup Piave cheese
½ cup fresh basil leaves
2 garlic gloves
1 tablespoon butter
1 tablespoon olive oil
1 teaspoon sugar
½ teaspoon salt + more to cook pasta
¼ teaspoon ground black pepper
1 – 1½ cups pasta water
Step 1
In a big pot boil the water, add a good amount of salt and cook pasta for 8-10 minutes.
Step 2
Cut the cherry tomatoes in half, then chop the basil leaves and garlic.
Step 3
In a big pan heat up butter and olive oil, add the garlic with tomatoes and cook for 3 minutes, then add the basil and cook for a few more minutes (until all the tomatoes have softened).
Step 4
Meanwhile, cut all the cheeses into small cubes and grind them in the food processor.
Step 5
Add the cooked pasta into the pan with the tomatoes, then sprinkle with cheese and add 1 to 1,5 cups of pasta water.
Step 6
Mix everything thoroughly until all the cheeses are melted. Garnish with more basil and bring it to the table.

Notes:
My recommendation is, not to prepare this dish in advance! It is one of those meals that you make and serve immediately!
