I really like to eat a salad for my dinner. Usually it’s a standard set of vegetables with chicken meat or eggs. But when summer time comes and I can get tasty and juicy fruits like peaches, nectarines, strawberries and more I like to make this salad that I call a “Fantasy” salad.
The basis of this salad are crispy Romaine lettuce, sweet and sour dry cranberries and crunchy candied pecans complemented with fruits of your choice. Today I made the salad with sweet strawberries and nectarines dressed with an unusually tasty sauce.

Ingredients for the salad:
One bunch of Romaine lettuce
1 cup strawberries
2 nectarines
¼ cup dry cranberries
½ cup candied pecans
Ingredients for the dressing:
¼ cup olive oil
2 garlic gloves
1 tablespoon sugar or honey
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon salt
Step 1
Clean and chop Romaine lettuce.
Step 2
Clean and cut strawberries and nectarines (I like to peel the nectarines but it’s up to you). Get the dry cranberries and pecans ready.
Step 3
In a small bowl mix all the ingredients for the dressing.
Step 4
In a big bawl put everything together and serve to the table!
Notes:
If you make this salad in advance, I will recommend to add the dressing just before serving the salad.
